Before this whole quarantine situation happened I was having a lovely time enjoying my vacation through Portugal, Spain and Morocco it was an amazing trip until the last two days before all hell broke loose and we had to panic and get home but that has nothing to do with this post.
We started the first day of our two week adventure in Lisbon Portugal and the first stop was the Time Out Market and must go to and I’ll share more things to do in Lisbon in a future post! But while we were in the market, they had a cute little Aperol Spritz stand and I had never had one so of course I had to try it!
Well it was as delicious and I imagined and honestly forgot about it until I went to the liquor store this week and decided to make my own so I can pretend I’m on vacation and not stuck at home. For the regular version of this cocktail I just follow the directions on the bottle but right before our daily walk today I had the Idea to make this in a smoothie form and HOLY COW IT WAS SO GOOD. And like healthier right?
I also hate it when someone shares recipe for something and tells a whole damn story so I’m gonna end this one here okay go!
Aperol Spritz Smoothie
Please read directions before you make it!
1/2 cup frozen peaches or mangos
1/2 cup pineapple
1/4 cup fruit juice (since I had frozen peaches I used mango juice)
4 oz Aperol Liquor
4 oz Prosecco
Orange for garnish
Add frozen fruit, fruit juice, and Aperol to blender and blend smooth adding more fruit juice if needed. You want it to be thicker since you will be adding in the Prosecco last so it will get thinner!
At to your fanciest glass because times like this call for the “good” glasses then top with with Prosecco and mix it in with a straw or spoon. You could blend the Prosecco but I personally did not want to. Top with a squeeze of orange and a slice for garnish!
Note: Use whatever orange/yellow fruit you have I just used peaches and pineapples since I can’t find mangos anywhere. I personally would not use bananas since I don’t like them but thats up to you!
